Christmas Treats

Most everyone makes yummy treats this time of the year, and I'm definately not an exception to the rule!  I love to bake and cook so this time of the year is the best time for me to break out the best-of-the-best recipes to make AND to try a few new ones!

I have made 2 things here lately that I'd like to share.  The first recipe I got from a fellow blogger (perhaps you follow Inside BruCrew Life?).  She did a post on a "Better Than...Christmas Poke Cake" from something swanky and it looked fantastic!

Only problem is I'm not a big fan of mint and chocolate (the combination, that is).

But this cake looked so darn good I just had to give it a try.  I'm so glad I did..it did not disappoint!  And yes..it was as good as it looks in the picture!  Only thing I didn't add was the Andes mint chips on top..I forgot to buy them..



My other recipe I made recently was an old favorite.  To eat, that is.  Because in the past, making it (for me) has been an impossible task.  Why you ask?  I never had the right recipe for it. 

So I emailed my former neighbor and asked her how she made potato candy.  For those of you who have never heard of or tried potato candy (might also be known in your area as pinwheel candy), you don't know what your missing!  Its the best stuff.  Ever.

Anyways, my neighbor used to always bring us a 'log' of the good stuff every year for Christmas.  Then we moved and I didn't get it anymore.  Bummer.  But now I can make it cause she shared her recipe!   Thank you April!!!!!!!!!!!!!!!!!!!!!!!!!! 

All you do is take 1 8oz package of cream cheese and a 2 lb bag of confectioner's sugar and mix by hand until its a stiff ball..roll it out..spread w/peanut butter..then roll it into a log.  Here are my super crazy cheesy pictures I took of the process.  Try not to laugh too hard..especially of the one of me holding the end product..it was quite a bit larger than I had anticipated after it was rolled and wrapped up in aluminum foil!
