Monday Munchies!

I thought for today's 'Monday Munchies' column I'd address the curiosity of some of my readers to a post I made last week.  I had to laugh when I would read  "cracker....salad??" but I can't blame them..the first time I heard of it I think I probably had the same reaction!  This is a Paula Deen recipe btw and when I heard about it and then read the recipe..I thought ok..this is something Damon would like but I definately wouldn't!!  Since I have such a dislike of tomatoes and mayo I knew it wouldn't exactly be "up my alley"..but after making it for him for the first time (and taking it to many a church potlucks) it soon became an instant hit with alot of people I know!  Now I have tried a tiny bite of it before..and the only way I know to describe it to anyone who's never tried it..is to say it tastes like something "old fashioned"..like something your grandmother would have made.  So if your a lover of things old fashioned (or want to try something new!)..give it a try and let me know how you like it!!



Cracker Salad

1-2 sleeves of crushed saltine crackers
2-3 green onions, chopped
1-2 tomatoes, seeded and chopped
2-3 hard boiled eggs, chopped
mayo (not sure how much I use but be prepared..it does take quite a bit)
pepper to taste

Mix all ingredients together, chill, and serve!  Its that simple folks..but as you see the quantities I've put down aren't very specific..you can make it to your liking basically.  If you like alot of tomatoes, use more.  Same with everything else.

  1. Hey Mel! Thanks for sharing your cracker salad recipe! It actually sound similar to a filling I make for stuffed tomatoes - minus the egg, plus some tuna.- Oh, thanks for your sweet comments about my hydrangeas...no, I don't have any "incrediball" varieties. My Annabelles used to get huge (like a basketball), but then I found they would droop very easily, so I didn't prune them this year, and they still have a million flowers, but much smaller and more manageable... As for pancakes w/ ricotta, no, I haven't made them before, but Jesse HATES ricotta, so I probably won't be trying that one :-). Hope you're having a great day so far! Can't wait to hear about your trip!
